Chef and proprietor of 2010 founded Folkart, a craft-driven hospitality group, which includes award-winning cocktail bar Billy Sunday, Wrigleyville destinations Lucky Dorr and Mordecai, and craft brewhouse Old Irving Brewing. Merges is deeply passionate about giving back and is the co-founder of Pilot Light, a Chicago-based charity that connects chefs and teachers, using food to support effective classroom teaching and learning.
